Frequently Asked Questions at Dassai

What is Dassai Blue sake?

Our sake is Junmai Daiginjo, a premium grade sake that is made with rice polished down to at least 50% of its original size and no additional alcohol or additives are used in the brewing process. Our sake has four ingredients - high-quality Yamada Nishiki rice, local water, koji mold, and carefully selected yeast.

What are your recommendations for serving sake?

The delicate flavors of Dassai Blue are best experienced when the sake is served at a temperature of 50 to 54℉ (10 to 12℃) and we recommend a wide-mouthed wine glass to allow you to swirl the sake and experience the fragrant aromas. Dassai Blue pairs perfectly with a wide range of foods from caviar to potato chips, vegetables, meat, cheeses and many fish dishes.

What are your recommendations for storing sake?

Please keep Dassai Blue chilled in the refrigerator to preserve the delicate flavors and aromas of the sake before enjoying. After you’ve purchased your bottle of Dassai Blue, we recommend enjoying it within three months. Once you open it, please enjoy the sake within a week.

Where can I buy Dassai Blue sake?

Dassai Blue is now available in stores and restaurants in New York, Florida, California, New Jersey & Massachusetts. Please click here to find a place near you.

You can also purchase Dassai Blue at our brewery in Hyde Park. We are open for retail during our business hours. Just ring the bell at the front door!

If you live in New York state, Florida, Minnesota, Washington state or Washington D.C., Dassai Blue is now available to purchase online for shipping.

Local delivery (within 60 miles of Hyde Park, NY) is also available.

Do you require reservations for tours and tastings?

Yes, you can book a reservation on Tock. Please click here to reserve.

If you are interested in just having a glass of sake, we are also open for walk-ins Wednesday - Sunday. Please see our hours of operations.

Can I cancel my reservation?

No. Just as with attending a sporting event, concert or the theater, all sales are final. We cannot cancel your reservation. If you cannot come, you can transfer your reservation to another date. Please email us info@dassai.com. If it is less than 48 hours notice, we will charge a $5 transfer fee/person in your reservation to move your reservation.

Where is the Dassai Blue Sake Brewery located?

How long are the tours and tastings?

Tours of our new brewery are about 25 - 30 minutes. Following the tour, we offer an hour long tasting of our Dassai Blue sake.

Due to limited seating, the experience is limited to 90 minutes.

What is included in the tour and tasting?

A tour of our new state-of-the-art brewery, led by one of our sake experts and a tasting of our Dassai Blue sake. Some tours may be self-guided audio tours.

Please note we now offer behind-the-scenes tours in the production area of the brewery, followed by a tasting.

On Fridays - Sundays, we offer small bites from the Culinary Institute of America or a cheese & meat plate (a non-meat option is also available).

On Saturdays and Sundays, we also offer freshly-prepared sushi for an additional charge.

note the brewers do not work on the weekends and during the weekdays, you may observe them working depending on the production scehdule.

How much does a tour and tasting cost? How many people per group?

The tour and tasting costs $50/person. We have a 12 person maximum per tour. We also offer a non-alcoholic option.

We also offer a behind-the-scenes tour in the production area of the brewery. This is followed by a tasting of Dassai Blue and a food selection. We have a 6 person maximum per tour and the cost is $85/person. We also offer a non-alcoholic option.

Can I come in to just purchase a glass of sake?

Yes! We are open for by-the-glass purchases and sake flights during the following times:

  • Wednesday: 5-8 PM
  • Thursday: 5-8 PM
  • Friday: 12-8 PM
  • Saturday: 12-8 PM
  • Sunday: 12-5 PM

We now offer food from the Culinary Institute of America Wednesday - Sunday.

What are the days and the hours the tasting room is open?

You can stop in to purchase a bottle (or bottles!) during our business hours. Just ring the bell at the front door.

  • Thursday: 10 AM, 11 AM (BTS Tour only)
  • Friday: 10 AM, 11 AM (BTS Tour only) & 12-5 PM
  • Saturday: 12-5 PM

Do I need to make a reservation for someone who is not participating in the tasting?

Yes, even if someone in your party is not planning on tasting the sake,
they will still need to make a reservation. We offer a non-alcoholic
tasting option.

Can I purchase a gift card?

Yes! You can purchase gift cards at our tasting room or online here.
Please note you cannot use the gift card towards a reservation on Tock,
but you can contact us at info@dassai.com and we can book a tour using
the gift card for you. Gift cards are also applicable for retail
purchases.

I am running late, what should I do?

If you are running late, please notify us via email at info@dassai.com or call us at 845-407-0721.

Seating is limited in the tasting room, so we will do our best to accommodate your party if you later than 30 minutes.

If you need to reschedule, we will charge a $5 transfer fee/person in your reservation to move your reservation.

Can I bring kids?

Kids are welcome to the brewery. We ask that they stay seated during the tasting and remain quiet during the brewery tour.

If your child is older and you would like to reserve a seat for them,
please consider booking the non-alcoholic tour option. This includes
food.

Because space is limited, we cannot guarantee a seat for anyone who does not have a reservation.

Is Dassai Blue Sake Brewery pet friendly?

No, pets are not allowed inside the brewery. We only allow service pets.

May I bring my own snacks or drinks?

No, we do not allow outside food and beverages.
