
NY BREWERY
Dassai Blue Sake Brewery, our new state-of-the-art brewery located in Hyde Park, is now open to the public. Our tasting room is open 7 days a week. You can come in for a glass of sake and freshly prepared sushi* - no reservation required!
If you are interested in a tour and tasting, please see the schedule below. Advanced reservations are preferred but we do accept walk-ins, pending availability. Please see our FAQ for hours of operation.
*Sushi is served Tuesday - Sunday

The Tour and Tasting includes
- A 35 minute tour of our new state-of-the-art brewery, led by one of our sake experts
- An hour-long tasting of Dassai Blue sake
- Small bites from the Culinary Institute of America or a cheese & meat plate (a non-meat option is also available)
- We offer freshly-prepared sushi for an additional charge
Just Want a Glass of Sake?
We are also open for by-the-glass purchases, sake flights and freshly prepared sushi Tuesday through Sunday, no reservation required. Please see hours below. You must be 21 or older to consume alcohol at the brewery. Please see our menu here.
You can also purchase bottles of Dassai Blue from the brewery during our business hours. Just ring the bell at the door!

Environment
We love the City of Hyde Park and the State of New York just as much as we love Iwakuni City, Yamaguchi Prefecture, home to a Japanese sake brewery.
We minimize our impact on the Hudson River and the surrounding environment. We have an extraordinarily large wastewater treatment plant.
Although it is a Japanese landscape, it is designed to blend in with the Hyde Park landscape.
